Chef Jack and Uncle Bill's Birthday


Jack was very excited when I told him it was Uncle Bill's birthday. He thought that meant a party, cupcakes and "new presents for me." I think he's referring to what we adults call party favors/treatbags. Anyway, he just wouldn't give up about the cupcakes so finally I broke down and dug out an old box of cake mix that needed to be used up anyway. We mixed up the batter and poured out enough for 6 cupcakes then threw the rest of the batter out since we really didn't need those cupcakes sitting around next to the Easter candy.
Chef Jack wanted to add marshmallows and chocolate chips to his cupcakes. Okay, why not. This is really more about the process of baking than the result anyway. I put the cupcakes in the oven. While cleaning up I noticed Jack didn't lick the beater- that's unusual. So I tasted the batter. It tasted a little....old. I looked at the box, "best if used by April 2002!" The most ridiculous part is that Chad must have carried that little cake box with him through 5 moves.
We were still brave/crazy enough or just craving chocolate to taste the final product when it came out of the oven and I have to tell you- those were some of the MOST DELICIOUS cupcakes I've ever had. We will definately add marshmallows and chocolate chips to future batches of FRESH cake mixes. My son is already creating his own recipes- Jack's Rocky Road cupcakes.

Love it--I think the things Jack always made tasted the best. He puts extra love in everything.
